Some questions from a non-tech person

Yes, just enable the “Forum visible to logged in users only” option in the settings.

An administrator has access to all functionality of the forum in the WordPress backend and frontend. A moderator only has access to the administration functionality in the frontend, e.g. close/delete/edit/move topics and posts.

Yes, because the forum is using the default WordPress user management so of course they need a WordPress account on your website.
Can admins/moderators automatically receive notification of all posts (new topics as well as new posts to existing topics)?
For ne topics: Yes. There is an option for this in the backend-profile. For new posts they have to subscribe to specific topics to prevent mail-flooding. But it would be possible to implement this functionality via some custom-code as well. Let me know if you need more information about this.
Is there a limit to the number of admins/moderators?
No.
Specifically what statistics are provided?
Those which you can also see here in the overview (number of users/posts/topics). I dont collect more sensitive data by default because there are better analytic-tools available for this.
Do you know of any websites using your plugin as an online support group?

Yes, just enable the “Forum visible to logged in users only” option in the settings.
