Update:

My host recreated the tables from a backup and I can see the posts are there in the stats. However, they’re not showing up in the structure or the front end.

Uninstalling the plugin removes all data associated with it. But luckily you were able to restore a backup. Have you re-created the structure by hand or did it came back like this after the backup? It seems that the topics are not assigned to the correct forums anymore so it can be neccessary to change the parent_id value inside of the wp_forum_topics table to re-assign them to the correct forum-id.

It’s the correct number of categories and forums but they don’t match.

As mentioned uninstalling the plugin removes all files related to the plugin to ensure that no unwanted data remains after uninstalling a plugin. I suggest you to contact your hosting-provider for a file-system backup to recover the uploaded files.

The uploaded files are usually located in /wp-content/uploads/asgarosforum.
